Chicken Wings
Here's the 'skinny' on the world of wings according to the big fat guy in the kitchen.

• Don't advertise “Jumbo Wings” and serve “Pigeon Wings”, people don't like that!

• Select the best sized wing, 8-10 per pound .
Smaller = pigeon, larger = old birds or chemically enhanced birds.

• Blanch the wings in the fryer at 300oF.
Lower temperature = more moisture retention and a juicier wing.

• Finish cooking the wings at 375oF.
Higher temperature = crispier wing.

• Toss the wings in Shenanigans’ wing sauce, but do not drown.
Other concoctions will not do, period.

• Serve wings hot, (not covered by the bone bowl which only steams them and makes them soggy)
with celery and carrots (you need your veggies too) and blue cheese.

Our recipe, no you can't have it, is as close as you will get to the original Buffalo style sauce
developed at the Anchor Bar when the first wing was served in, well, before our time!
